Spaghetti Carbonara

One of my favorite recipes is for a classic spaghetti carbonara. Here's what you'll need:


Ingredients:

- 1 pound spaghetti

- 6 slices of bacon, chopped

- 4 cloves of garlic, minced

- 3 large eggs

- 1 cup of freshly grated Parmesan cheese

- Salt and pepper, to taste

- Fresh parsley, chopped (optional)


Instructions:

1. Cook the spaghetti in a large pot of boiling salted water until al dente. Reserve 1 cup of the pasta water before draining the spaghetti.

2. While the spaghetti is cooking, cook the chopped bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside.

3. In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.

4. In a mixing bowl, whisk together the eggs and Parmesan cheese until well combined.

5. Add the cooked spaghetti to the skillet with the garlic and toss to coat. Remove the skillet from the heat and add the egg mixture, tossing the spaghetti until the eggs are cooked and the sauce is creamy.

6. If the sauce is too thick, add some of the reserved pasta water to thin it out.

7. Add the cooked bacon to the skillet and toss to combine.

8. Season with salt and pepper to taste. Top with chopped parsley, if desired.
